Shrove Tuesday Pancakes
How to make the perfect healthy pancakes! These are gluten free so you won't feel bloated and tired after eatting them. Top them with fresh berries and yoghurt for a healthy and substantial breakfast.
What you will need
150 g / oz brown rice flour
75 g / oz potato flour
2 scoops Solgar Whey to Go Protein Powder - mixed berry flavour
1-2 tbsp of xylitol
1 1/2 tbsp xantham gum
2 eggs
3 tbsp olive oil
1 1/2 tsp of Baking Powder
Almond Milk to make a thick, pouring batter
Topping
150 g /6 oz fresh mixed berries - blueberries, stawberries, raspberries
Full fat Organic Yoghurt and desicated coconut for sprinkling!
How to do it!
In a bowl sift together the flour, baking powder,protein powder, xylitol and Xantham gum
Stir in eggs, oil and milk and stir well until well blended - or use an electric whisk!
Heat a well oiled frying pan over a medium heat. Spoon the mixture into the pan and cook until bubbles begin to form. Flip and continue cooking until golden brown on the bottom
Serve immediately with fresh berries and yoghurt. Sprinkle with desicated coconut of dark chocolate shavings, add maple syrup or honey if desired.
